One-Pot Creamy Tomato Soup

This creamy tomato soup is so easy to make, you'll never want to go back to store-bought soup again. It's staring to get cold out, and we are still finishing up the last of our tomatoes from the garden, which inspired me to make this soup. Heirloom tomatoes are my person favorite, not only because they are gorgeous, but because of the fresh and rich flavor they provide. If you can't get your hands on heirlooms, a mix of on the vine tomatoes and Roma tomatoes, and even cherry tomatoes will also work. While the fresh garden tomatoes are a summer treat, I don't love to have soup in the summer, so this recipe is good year around! Don't forget the grilled cheese to go with the soup. Get a really good sourdough or homemade white bread and a mix of cheeses such as gruyere and Monterey jack for that iconic cheese pull.

  1. -Preheat oven to 400*F and chop the tomatoes and onion. Cut the top off the garlic head.

    -Add all the items except the chicken broth and heavy cream into an oven-safe Dutch oven and toss to evenly coat with the olive oil and seasonings.

    -If preferred and available, you can put the garlic head into a separate small cocotte to roast, which I did but adding it into the Dutch oven with all the other items will work as well.

    -Bake for about 50 minutes, making sure the tomatoes are roasted and the garlic is a golden color and soft.

    -Once removed from the oven, squeeze the garlic out of the garlic clove into the pot. Then add the broth and use an immersion blender to blend until smooth and creamy. If you don’t have an immersion blender, transfer into a regular blender and blend until smooth. Do this with caution, as it will be very hot!

    -Once the soup is smooth and creamy, stir in the heavy cream or coconut cream if you are using it to give a little richness. If you used a regular blender, transfer the soup back into the pot before adding the cream.

    -Taste to determine if you need more salt or pepper and add to your liking.

    -Best served with a grilled cheese sandwich, or wonderful on its own!

Notes

  • If you can't find heirloom tomatoes, get a mix of on the vine, Roma, and even cherry tomatoes. It will taste just as good!
