Mixed Berry Crumble Bars
Description
These might be my favorite sweet treat that I have made so far. They aren’t too sweet, slightly tart, and has the perfect consistency when I think of a crumble bar. The berry filling is super easy to make, and I just used frozen berries, but if you prefer fresh that would work, too! Any combination of berries that you have on hand will do the trick. I hope you enjoy!

- Preheat oven to 350*F and line a 9x13 baking pan with parchment paper.
- In a saucepan on medium heat, add the frozen berries, fresh berries, zest, and juice of one lemon, monk fruit sweetener (or sugar) and vanilla extract. Stir to combine.
- Once the berry mixture has been fully combined, add in the cornstarch and mix. This will help thicken the filling. Let simmer for 10-15 minutes until thick.
- Remove from heat and transfer to a heat-safe bowl and place in the refrigerator to continue to thicken and chill.
- In the meantime, using a food processor, add in all the crust ingredients except for the butter. Pulse to combine.
- Add in the cold cubed butter and mix on high until a dough form into a ball. It may take a couple of minutes but trust the process!
- Take 2/3 of the dough and press into the bottom of the prepared baking pan until evenly coated.
- Bake for 15 minutes until the edges are slightly golden.
- Add the berry filling on top of the crust. Take the remaining 1/3 dough and distribute it in small pieces on top of the berry filling.
- Bake for another 25-30 minutes until the top is golden brown and the filling is bubbling.
- Let cool completely and then store in the refrigerator. It’s easiest to cut after it has been refrigerated.
