I absolutely love tuna poke. I’ve had it as an appetizer with wontons, in a taco, on its own, and my favorite- in a bowl. Let’s not forget about all the toppings and garnishes, because all those contrasting textures and flavors just mend so well together. I found it quite difficult to locate tuna poke in my area for purchase. Even difficult to find the sushi-grade tuna to make it on my own. Finally, after a few phone calls, I found a local butcher shop that carried the sushi-grade tuna and figured it was easy enough to create on my own, so I went that route. Be sure that you are purchasing the sushi-grade tuna, because this is a raw fish dish, it is safe to eat. Also, tuna is so lean, and full of protein, you can really load up on the tuna poke and you will stay full for a long time. This bowl has the perfect combination of lean protein, simple and complex carbs, and healthy fats. Sure, the kewpie mayo probably isn’t healthy, but hey we are eating in moderation here, and honestly, it makes the dish in my humble opinion.

Ingredients
    Tuna Poke Ingredients
  • 2 sushi-grade tuna steaks, diced into small to medium cubes
  • 2 tbsp soy sauce
  • 2 tsp sriracha sauce
  • 1 tsp sesame oil
  • 1 tsp sesame seeds (optional)
  • Rice Ingredients
  • 1 cup white sushi rice
  • 1 cup water
  • 2 tsp rice vinegar
  • salt to taste
  • Cucumber Salad Ingredients
  • 1 cucumber, sliced thin
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp furikake seasoning
  • salt to taste
  • Poke Bowl Toppings
  • 1 large avocado, sliced thin
  • 1/2 cup sliced green onion
  • Optional Garnishes
  • Kewpie Mayo
  • Sriracha Sauce
  • Furikake or Sesame Seeds
  • Seaweed (I used Sushi Nori)
Instructions
  1. Tuna Poke Instructions
    1. Add all the ingredients to a bowl and mix. Set aside until ready to assemble the bowls.
  2. Rice Instructions (electric pressure cooker)
    1. Add the rice in the bowl of a pressure cooker and cover with water. Rinse the rice and repeat 2-3 times making sure the rice is well-rinsed. You’ll know it’s ready when the water runs clearer. Strain with a mesh strainer and add back into the pressure cooker bowl.
    2. Add in the 1 cup of water.
    3. Cook on high for 3 minutes, with natural release.
    4. Once cooked, add in the rice vinegar and salt and mix. The rice should be sticky and a little fluffy.
    5. See notes if you don’t have an electric pressure cooker.
  3. Cucumber Salad
    1. Add all ingredients to bowl and set aside.
    2. When ready to add to the bowl, squeeze out any extra liquid.
  4. Bowl Assembly Instructions
    1. Add the rice to your bowl, and top with the tuna poke, cucumber salad, avocado, and green onion.
    2. Top off with garnishes of your choice.
Notes
  • If you don’t have an electric pressure cooker such as a Ninja Foodi or Instant Pot, then I recommend following the stove top directions for cooking the rice found on the rice package.
