Soy & Citrus Glazed Salmon

Monday nights, we typically have some type of fish for dinner. Why? I’m not entirely sure, but it has become an unplanned weekly occurrence, and I am here for it! Salmon is a fan favorite in our household, and I’ve found that it’s extremely versatile. I was feeling something bright and fresh, slightly sweet. I had a handful of large oranges on hand and thought that would satisfy this flavor profile I had in mind. And let me tell you…was I ever right! It’s got the salty, sweet, citrus, and heat! Paired with a hearty grain such as brown rice, and a fresh vegetable (my favorite is green beans), really rounds this meal out to be nutritious and delicious.

Soy & Citrus Glazed Salmon

    1. Preheat oven to 375* F
    2. In a bowl, mix the soy sauce, orange juice, orange zest, garlic, and ginger.
    3. Place the salmon filets on a sheet pan with aluminum foil, pour the sauce mixture over, place an orange slice on each filet, and fold up the edges to form a packet so the sauce doesn’t leak out.
    4. Bake for 18-20 minutes until cooked through.
    5. Cook the brown rice according to package or cooking method of choice. I use the Ninja Foodi pressure cooker portion, so I simply follow those directions.
    6. Remove the pan from the oven and switch setting to broil. Unfold the aluminum foil packet so the salmon is uncovered and place under the broiler for about 5 minutes until the top is slightly caramelized.
    7. Meanwhile, using a non-stick skillet, heat the olive oil on medium heat. Add in the green beans, salt and pepper and sauté for about 6 minutes, covered. Stir every few minutes. I usually add in some minced garlic with the green beans for added taste, however this is personal preference.
    8. To plate, place the rice down and top it with a salmon filet, adding green beans on the side. Spoon over any extra sauce from the pan, as desired.

  1. Found this dish really easy to make. It tastes so good it seems like it would be more complicated than it is. The citrus flavor nicely enhances the salmon. As a bonus, it helps keep the salmon from becoming dry. This recipe will easily become a favorite.
