I don’t know about you, but I love a good pasta salad recipe. Especially in the summertime when most of the ingredients involved are fresh from the garden. Included in this is also my Pesto recipe, which can be used for so many things! Add it into hot pasta, on pizza, or over chicken for a few ideas. The classic combination of tomato, mozzarella, and basil will have you coming back to this recipe every summer when you’re ready to use up those tomatoes!

Pesto Pasta Salad

Instructions

  1. Pesto Instructions
    1. Add the walnuts and garlic cloves to the food processor and pulse until combined.
    2. Add in the parmesan, lemon juice, and basil. Mix on high, scraping down the sides as needed.
    3. Gradually drizzle in the olive oil as the food processor runs and the pesto comes together.
    4. Add in salt to taste.
  1. Pesto Pasta Salad
    1. Add the cooked pasta to a large mixing bowl with the pesto, chicken, tomatoes, and mozzarella balls.
    2. Mix until the pesto is combined with all ingredients.
    3. Chill in the refrigerator or eat at room-temp!
