(Not So Average) BLT Sandwich
Taking a basic BLT and enhancing a few of the classic ingredients seriously takes this sandwich to the next level. The sweet and peppery bacon paired with the savory aioli is such a good pair, you will be craving more in no time.
I consider sandwiches to be one of my favorite foods. There are limitless options when it comes to creating a sandwich! There's something about using seasonal ingredients, such as heirloom tomatoes, that can make a dish taste so much better, because it's not something you get year-around. Adding a few enhancements is an easy way to elevate an ordinary sandwich, and that’s exactly what I did here. Personally, I love adding brown sugar to bacon in any circumstance, however it’s especially good in this sandwich. You get sweet, peppery, tangy, creamy, and crunchy all in one bite. It’s every texture and taste you could dream of. Because bread is the foundation of any good sandwich, be sure to choose a good one that can toast up nicely and hold the BLT inside! Please give this a try, you won’t regret it.
- 4 Slices of good sandwich bread (I used a sourdough type bread)
- 4 Bacon strips
- 4 Heirloom Tomato slices (Slice it thick for a hearty sandwich)
- 1 Handful of mixed greens (Or lettuce of choice)
- 4 tsp Swerve Brown Sugar Replacement (Can use regular brown sugar)
- 1 tbsp Mayo
- 1/2 tbsp Nonfat Greek yogurt
- 1 tsp Lemon juice
- 1 clove Garlic, chopped
- 1 tbsp Fresh basil, chopped
- Salt and Pepper to taste
- Preheat oven to 400*F and line a baking sheet with aluminum foil and place a wire rack on top of the baking sheet, if you have it. This will help the bacon crisp up.
- Lay the bacon strips out on the wire rack, or just on the baking sheet and sprinkle black pepper on each slice. Bake for 10 minutes then flip bacon over and add 1 tsp of brown sugar per bacon strip and additional black pepper. Bake for another 10-15 minutes, depending on your preferred crispness.
- While the bacon is baking, in a small mixing bowl combine the mayo, Greek yogurt, lemon juice, garlic, basil, and salt and pepper. Set aside in the refrigerator until you’re ready to assemble the sandwiches.
- Slice the heirloom tomatoes to your desired thickness. Toast each slice of bread, if you would like, and set aside.
- Once the bacon is done, spread each slice of bread with the Basil Garlic Aioli. Layer the bacon, lettuce, and tomatoes and top with the other slice of bread.
- If you prefer not to add brown sugar to the bacon, feel free to omit that step.
- I do recommend toasting the bread a light-medium amount so the outside is slightly golden and it's still soft enough to bite into.
- Feel free to add more tomato slices if you want!
