Lox Brunch Board

A smoked salmon board is exactly how I would want to start off every day if I could! Healthy bagels as the base makes this brunch filling without sacrificing any flavor. Get creative with your toppings and combinations and go wild with this colorful, delicious board.

Assemble the smoked salmon bagel as you wish. I like to layer cream cheese, cucumber, tomato, smoked salmon, red onion, capers, squeeze of lemon juice and lemon zest.

Description

Smoked Salmon is one of my all-time favorite foods. And who doesn't like a bagel in the morning? Pair the two together with fresh produce, and you have yourself a power brunch to get you through the day! This board is full of fresh vegetables, a punch of citrus, and a whole lot of color. We all eat with our eyes anyways, right? This board is a show-stopper for any occasion, and I encourage you to create your own the next time you are brunching at home!

Ingredients
    Two Ingredient Dough Bagels
  • 1 cup Self-rising flour
  • 1 cup Nonfat Plain Greek Yogurt
  • 1 tsp Baking Soda (Optional to make them a little extra puffy)
  • Bagel toppings such as Everything But the Bagel Seasoning (Could use salt, cheese, cinnamon, etc.)
  • Smoked Salmon Board
  • 1 Package Smoked Salmon
  • 1/2 cup Cream Cheese (I used Whipped Cream Cheese)
  • 1/4 Cucumber, sliced
  • 1 Tomato, sliced
  • 1/4 Red Onion, sliced
  • 1/4 cup Capers
  • Sliced Lemons (Optional as garnish)
Instructions
  1. Two Ingredient Dough Bagels
    1. Preheat oven to 375* F.
    2. In a mixing bowl, add the flour, Greek yogurt, and baking soda.
    3. If you are using an electric stand mixer, use the dough hook to mix for about 2 minutes until combined into a ball. If you are using your hands, mix for about 2 minutes until a ball forms. Add flour as needed, as the dough will be very sticky.
    4. Place a piece of parchment paper down and flour on top of that for your workspace. Divide the dough into four equal parts.
    5. There are two easy ways to forming a bagel from the dough. The first would be to form the portion of dough into a small ball and poke a hole in the middle, stretching the dough outwards until it forms a bagel shape. The second would be to roll the portion of dough into a log, as thick or thin as you want, and bring the two ends together forming a bagel. 
    6. Place the four bagels on a baking sheet lined with a silicone baking mat or parchment paper to help avoid sticking.
    7. If you are adding seasonings on top, brush the bagel with water, milk, or egg and sprinkle on seasoning.
    8. Bake for about 15-18 minutes until golden on the bottom.
  2. Smoked Salmon Board
    1. Slice the cucumber, tomato, onion, and lemon.
    2. Add the cream cheese and capers into separate small ramekins. 
    3. Arrange each item around the board as you see fit. Don't be afraid to get creative with it! 
Notes
  • Add or remove any ingredients you wish for your board.
  • A delicious alternative to cream cheese would be my Whipped Feta Dip or Whipped Ricotta, both can be found on my page by clicking the appropriate link!
