Lemon & Garlic Hummus

Hummus is a staple in our house. It’s always on the weekly grocery list, and there are so many different flavors you can add in for enhancements. While traditional hummus is delicious as is, I wanted to add a spin to bring a bright and fresh flavor. How did I do so? Lemons. Specifically, lemon zest. I think citrus zest is extremely underrated, and I would argue that it brings more flavor than the juice of a citrus fruit! The lemon zest, lemon juice, and garlic all pair so well together in this dish, trust me. This recipe is so easy and extremely cost friendly, you absolutely have to give it a try!

    1. Rinse the garbanzo beans and remove the skin/film part from the beans. While this is sort of a tedious task, I PROMISE it makes a difference with the smoothness for the hummus. If you prefer a grainier texture, feel free to skip this part.
    2. Add the tahini and the zest and juice of one lemon to the food processor. Mix for about 30 seconds, then scrape the sides down. Repeat for another minute to ensure the tahini becomes somewhat of a whipped consistency. This will help ensure the hummus is smooth and creamy.
    3. Add the garlic clove and olive oil to the food processor and mix for 1 minute. Scrape down the sides as needed.
    4. Next, add half of the garbanzo beans and mix for 1 minute, then add the remainder of the garbanzo beans. Mix for 1 more minute and scrape down sides. It will be a very thick consistency.
    5. As the food processor is going, slowly add in the 3 Tbsp of water. This will help thin out the hummus and achieve the smooth creamy texture.
    6. Sprinkle in salt to taste. Continue mixing for about 1 minute, until the desired consistency. I would recommend tasting during this step to ensure enough salt is added.
    7. Serve in a bowl with a drizzle of olive oil and sprinkle of lemon zest.
