Description

It’s that time of summer when the peaches are abundant and perfectly ripe. I don’t know about you, but in the summer, I’m craving a fresh and light dessert that doesn’t give me that heavy feeling. Grilled peaches and a whipped ricotta topping are a perfect solution for that craving! If you haven’t ever grilled a peach, I highly recommend giving it a try. The key is to make sure the peach is perfectly ripe, where it is slightly soft to the touch without being mushy. This will help the peach keep its shape while grilling and bring out just enough juices. The cinnamon honey ricotta is both sweet and savory and pairs so nicely with the peaches. Just a dollop on top is all you need! Pair this dessert with a crisp white wine, and you have yourself a fabulous summer evening.

Ingredients
  • 4 Peaches, halved with the pit removed
  • 1/2 cup Ricotta Cheese
  • 1/2 tbsp Honey
  • 1/2 tsp Lemon Zest
  • 1/2 tbsp Lemon Juice
  • 1/4 tsp Cinnamon
  • 1 pinch Salt
  • Mint and lemon zest for garnish (Optional)
Instructions
    1. Using a grill pan or an outside grill, spray with non-stick spray and place the peaches cut side down over medium heat. Heat through for about 6 minutes, until grill marks appear.
    2. In a food processor, add the ricotta cheese, honey, lemon zest, lemon juice, cinnamon, and a dash of salt. Mix on high for about 1 minute. Scrape down the sides and pulse until smooth.
    3. Add about 1 Tbsp of the ricotta on top of each peach half and garnish with lemon zest and mint.
