Decadent Chocolate Mousse

Description

A quick and easy dessert that anyone can prepare, and a bonus for our vegan friends! I have found that coconut cream is a great substitute for many decadent desserts, and it really doesn’t have the taste of coconut. I know the taste of coconut can be a huge hit or miss, but I encourage you to give this a try! I love pairing it with raspberries or strawberries, and a dollop of whipped cream is always a good idea. Keep in the refrigerator longer to make it extra thick and creamy. This decadent treat is well worth the indulgence.

Ingredients
  • 13.5 floz Can of Unsweetened Coconut Cream
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tbsp Agave (Can use honey if not making it vegan, or any sweetener substitute if you want to make it sugar free)
  • 1 tsp Vanilla Extract
Instructions
    1. Remove the coconut cream from the can into a mixing bowl, not including the liquid in the can. The cream and liquid will likely be separated, with the liquid on bottom. You will want to ensure you only include the coconut cream for this recipe.
    2. Using an electric hand mixer, or electric stand mixer using the whisk attachment, whisk the coconut cream for about one minute until creamy and slightly fluffy.
    3. Add in the sweetener of your choice and vanilla extract. Whisk until smooth.
    4. Slowly add in the cocoa powder and whisk on low to combine for about 1 minute.
    5. Refrigerate for at least one hour before serving. The longer you leave it in the refrigerator, the thicker the texture will be.
    6. Optional toppings could include berries, whipped cream, chocolate shavings, etc.
Notes
  • I have made it with both honey and agave individually, and they are equally as good. I have also made it with the Lakanto Monk Fruit Sweetener, and while the taste is certainly there, the texture appeared to be slightly grainy. I would suggest a confectioners sweetener or sugar if you aren’t using a liquid sweetener.
