It really doesn’t get any easier than this. Who knew that sliced tomatoes, mozzarella and basil could be such a dreamy combination? While I love the sandwich version of caprese, you can’t go wrong with the classic. It’s the perfect summer “salad”. Fresh, light, flavorful. If you have tomatoes growing in your garden, this is the perfect excuse to use them. I personally like a drizzle of balsamic glaze over the top, but with or without, it’s always going to be a favorite summer staple.

Ingredients
  • 2 Large tomatoes, sliced (I used heirlooms from my garden)
  • 8 Slices fresh mozzarella
  • 8 Fresh basil leaves
  • Drizzle of olive oil
  • Salt & Pepper to taste
  • Balsamic Glaze (Optional)
Instructions
    1. Layer the slices of tomato, mozzarella, and basil leaves on a plate. Drizzle olive oil over the top and finish with salt and pepper. Add a drizzle of balsamic glaze, if you’d like!
