Do you ever crave something sweet but want to have some sort of nutritional value to satisfy it? These Chocolate Dipped Energy Bites are full of clean ingredients while still satisfying that sweet craving! I’ve tried many different energy bites in my day, and I’d like to believe I have finally mastered a really good recipe. Sometimes I feel like the chocolate chips in the energy bites just doesn’t cut it with enough chocolate, because you know, you can never have enough chocolate. So, with that said, I figured I’d try drizzling and dunking the energy bites into melted chocolate, and I don’t know why I didn’t think of this sooner. The melted chocolate and little bit of coconut oil give it that hardened chocolate shell on top, and the flaky sea salt seriously sends it all through the roof. Don’t skip the sea salt, just trust me. I feel good about eating these because of the clean ingredients, and they really do keep you full, so it’s a great snack on the go or in-between meals to tide you over.

Ingredients
  • 2 cup Rolled Oats
  • 1/3 cup PB2, prepared (Can use regular Peanut Butter or any other nut butter)
  • 1/4 cup + 1 Tbsp Lakanto Maple flavored syrup (Can use regular maple syrup)
  • 1/4 tsp Vanilla extract
  • 1/4 cup Ground Flaxseed
  • 4 Scoops Vital Proteins Collagen Peptides Unflavored (could use a different collagen or protein powder, may alter the consistency)
  • 40 g Lily’s Mini dark chocolate chips (Optional)
  • 4 Squares Lily’s Semi-Sweet baking bar (half the bar, can use dark or milk chocolate if you prefer)
  • 1 tsp Coconut oil
  • pinch Flaky Sea Salt
Instructions
    1. In a mixing bowl, combine the rolled oats, ground flaxseed, and powdered collagen and mix.
    2. Add in the prepared PB2 (or other nut butter), Lakanto maple flavored syrup, and vanilla extract. Mix to combine. It will be a sticky mixture but should remain firm enough to form a ball.
    3. Add in the chocolate chips, or any other add-ins you may want. Portion out to about the size of a Tablespoon and roll into balls.
    4. Place in the freezer for about 30 minutes.
    5. Add the 4 squares of the Lily’s baking bar and coconut oil into a microwave safe bowl and microwave for about 30 seconds. Stir until melted completely.
    6. Drizzle, dunk, or coat each energy bite with the chocolate and then sprinkle with flaky sea salt. Feel free to get creative with the chocolate drizzle!
    7. Store in the refrigerator or freezer for up to 5 days.
Notes
  • Be sure to use ground flax seed so your body can digest all of the benefits of flax seed. Keeping them whole won’t be as beneficial, and it also helps with the texture of the energy bite.
