Lemon & Pea Pasta Salad

Spring is right around the corner and starting it off with a lightened-up pasta salad that will still keep you full and satisfied is certainly ideal. This pasta salad is full of bright and fresh flavors and will be ready in under 20 minutes.

Lemony, garlicy, fresh herbs and vegetables…what more could you ask for in a pasta salad dish for the spring? This recipe is packed full of fresh and bright flavors, you’ll be going back for seconds. The dressing is so simple and light, I promise you will not be missing that traditional creamy dressing that is typically on a pasta salad. You could easily add a protein to this dish, such as grilled chicken or shrimp, however the beauty of using Banza pasta, is that there is already 23 grams of protein per serving! Perfect for lunch, dinner, or as a side dish, and will definitely be a crowd pleaser.

    1. Cook the Banza pasta for about 7 minutes or until al dente in boiling water. Drain and set aside.
    2. While the pasta is cooking, in a mixing bowl combine the lemon juice, olive oil, most of the lemon zest (saving a bit for garnish), chopped garlic, onion powder, basil (again saving a bit for garnish), and salt and pepper. Whisk until combined into a dressing consistency.
    3. Once the pasta is cool, add it to the bowl along with the peas, cherry tomatoes, green onion, and feta cheese. Toss all ingredients together gently, until fully combined.
    4. Garnish with lemon zest and basil.
    5. Let cool in refrigerator for at least an hour, if you prefer to eat it cold. Otherwise, dig in!

Notes

  • Can sub out the Banza pasta for any brand. I personally like Banza because it’s full of protein, and still has a very similar texture to a regular pasta. Can also use any shape, however, would recommend a smaller pasta noodle and nothing long.
  • Can easily double the recipe for 4 servings instead of 2. This would simply be one full box of Banza, and then doubling all other ingredients.
